Japanese Black Wagyu Beef Ichibo Steak
This is a Japanese Black Wagyu beef steak made with "ichibo," a rare cut of meat that can only be obtained in small quantities from a single cow. The balance between the savory flavor of the lean meat and the sweetness of the high-quality fat makes this steak absolutely exquisite
Tosa-style Kuroge Wagyu beef
This chilled dish features thinly sliced, lightly seared Kuroge Wagyu beef raised in the natural environment of Yakushima Island. Enjoy it with plenty of fresh herbs and vegetables

Broken neck mackerel sashimi/Flying fish sashimi
This dish features fresh sashimi of Yakushima's famous "kubiore saba" (neck-broken mackerel), which undergoes special processing immediately after being caught to maintain its freshness to the maximum extent, and "tobiuo" (flying fish), which boasts the highest catch volume in Japan

Deep-fried amberjack kama
We use amberjack from the waters off Yakushima, raised in the warm Kuroshio Current. The thick, flavorful collar (the part below the gills) is served deep-fried. We can also prepare it grilled with salt upon request
water squid sashimi
The top-grade bigfin reef squid, known as the "king of squid," is called "mizuika" on Yakushima Island. It is a very tender and intensely sweet sashimi
Braised pork belly
Tokobushi, a type of abalone-like shellfish native to Yakushima Island, is simmered in a special sweet and savory sauce. Characterized by its rich ocean flavor and deep umami, it's the perfect accompaniment to alcoholic beverages
Turtle hand miso soup
This miso soup uses a rare type of seafood called "turtle's hand," which inhabits rocky areas. It is considered a delicacy in Spain and other countries. Enjoy the aroma of the sea and the rich flavor of the broth
